How to brew a proper masala chai
Two boils, one rest, zero shortcuts.
The secret to great chai isn't a secret: real leaves, whole spices, and patience.
You'll need 1 heaped tsp Strong Masala Chai, 1 cup water, ¾ cup milk, sugar to taste.
Method 1. Bring the water and chai to a boil and let it bubble for two minutes. This is where the spice opens up. 2. Add milk and sugar. Bring it to a rolling boil, let it rise, then lower the flame. Do this twice. 3. Take it off the heat and rest for 30 seconds before straining. The leaves keep giving.
